I think the best idea would be to make separate websites listen on 127.0.0.1:<separate-port>, and then add a custom server {} with multiple locations which would proxy_pass to the previously configured websites based on NAME in URL.
Custom servers can be put into /etc/nginx.custom.d/

What kind of plugin documentation would you consider actually useful?

Currently, Ajenti can be installed with pip install ajenti, however there are some plugins that lack Arch support. This is because Arch isn't our primary focus of development, and Arch support is being added by individual committers who undertook this hard task on their own.
